Common Name: Dorado | Mahi Mahi | Dolphinfish | Dolphin 
Binomial Nomenclature: Coryphaena Hippurus
Culinary Use: Mahi-mahi has lean flesh with a mild, sweet flavor profile, moderately firm texture and large, moist flakes. The skin is thick and should therefore be removed before cooking. 
Medicinal Use: Protein-rich food with omega-3 fatty acids like EPA and DHA; vitamins A and D.
Fun Fact: They are among the fastest swimmers in the sea, and their Spanish name is Dorado maverikos which means “golden maverick”.
